Culture: By hand. Harvested at optimal maturity.
Wine making: Destemming, cold maceration, temperature-controlled fermentation, remontage (the pumping over of juice) and délestage (rack and return). 30 days skin contact. Pressing done by pneumatic press.
Ageing: 6 to 8 years in vats.
Tasting: The Grenache & Syrah grape varieties bring out a lovely cherry colour with violet highlights. A very pleasing nose – fruity, with notes of undergrowth and spices. In the mouth, savoury tannins which are firm yet mellow.FOOD-WINE
